Pizza is my favorite meal/snack, but unluckily I can't eat wheat, tomatoes, cheese or chili/pepper... Not much of a pizza without these ingredients! I have tried versions made with combinations of a variety of ingredients, but no oneto my liking. Until now! I have seen this several places through the web, in blogs and on Instagram. But I have always thought that this could never be any good. Cauliflower (Blomkl) crust.... yeah right....

Surprise, surprise! It's actually good, very good! Not exactly like the original, but absolutely a good substitute. It is not strictly Paleo, because of the cheese and buckwheat/tapioka, but that's ok once in a while. You should try it too, here is the recipe :)

Ingredients for the crust:

1/2 Cauliflower
2 tbs shredded parmesan cheese
1 large egg
1 tbs olive oil
1 tbs tapioka powder
2 tbs buckwheat
1 ts himalaya salt or sea salt

What to do:

Shred or chop the cauliflower and mix all ingredients together in a blender or use a hand blender ( I do)

Spread the batter on a baking sheet in your preferred shape; round, heart shaped etc :)

Bake in oven at 250C for 15 minutes.

Once out of the oven, let it cool a bit while you prepare the toppings. I used a thin layer of pesto, a handful of mozzarella cheese and some pre cooked chunks of chicken breast. After about 10 minutes in the oven, at 250C, the cheese is nice and bubbly and has got some colors, I tossed on rockets, shaved parmesan cheese, a bit olive oil and some himalaya salt. YUM!

Some fermented grapes on the side is also a good idea.... ;)
